Passitivo is produced using only the best Organic Primitivo grapes grown in low-yielding vineyards in Puglia, Southern Italy.  A portion of these grapes are dried (APPASSIMENTO) to concentrate their aromas and rich full flavours.  PASSITIVO has a deep red colour and a complex bouquet reminiscent of cherries, raspberries and red currants.  The ageing adds a pleasant roasted and spicy aromas and makes this full-bodied and supple wine perfect with roasted red meat and mature cheeses.
